This Cheese has been given a French/Australian name due to its origin and development. Our Cheese maker Jack leant how to make it with the fromagers of Le-Pic in the South of France. On return to the Yarra Valley Dairy Jack changed a few steps to suit the characteristics of the Dairy and Le Jack™ was created.
The cheese starts out with soft texture and subtle goat flavours. As it matures the delicate white mould breaks down the centre and produces a creamy texture. The flavour becomes a gentle nutty and earthy flavour with good extension.
